FIELD: food industry.
SUBSTANCE: sweetener composition is proposed containing tagatose, galactose, galactooligosaccharides, glycerine, other sugars, lactose and lactulose, in which the ratio of tagatose/galactose is 1.0–1.6, and the amount in % is indicated in terms of the weight of the dry composition. The composition in the form of a syrup has a saccharometric concentration of 58–62° bx.
EFFECT: invention allows to avoid crystallization of tagatose, and also allows to reduce the production cycle time while increasing productivity.
