SUBSTANCE: invention relates to the food industry and namely to modulating a sweetness profile in a product. Proposed are new sweetener compositions containing a compound having a structure in accordance with formula (I)
where R1, R2, R3 and R4 are described herein. Also provided are methods for modulating the sweetness profile of a product by adding a compound of formula (I) to a product such as a drink or food product.
EFFECT: compound described herein, when added to a beverage or product, provides an increase in the overall sweetness of beverages or foods sweetened with a nutritive sweetener, while reducing the onset of sweetness for potent sweeteners such as rebaudioside A, reducing unwanted bitter, metallic and licorice flavors in potent sweeteners and improving the quality of the sweetness of sweetened foods.
