FIELD: food industry.
SUBSTANCE: group of inventions relates to the food industry. Method of baking cookie hollow inside from a dough and a device for its implementation are proposed. Method involves preparation of dough, pouring dough into moulds heated to temperature of 250 °C, performing dough heating at temperature of 250 °C until formation of external baked crust. Then the dough is removed from the cookie by turning the moulds and suctioning off the baked dough to form a container, and the heater heated to 250 °C is lowered inside each cookie. Heater is pressed with an even side to the edge of the hole, then moved along the horizontal line forward to the opposite edge and is moved along the circumference of the hole, simultaneously rotating it, and the biscuits are baked inside. Device for implementation of the method for baking hollow inside a cookie includes a unit of moulds having cavities, a current collector, a cooler, a carriage and heaters. Moulding unit consists of two half-moulds, half-moulds are fixed on brackets. Heaters are movably fixed on carriage with possibility of rotation, lowering and lifting. Heater base is connected with cooler. End of heater has shape of segment, shape of which is combined with inner container of mould. Distance from heater axis to maximum segment bending point is smaller than that of mould. Heaters and half-moulds are coated with anti-burn coating.
EFFECT: group of inventions makes it possible to bake cookies hollow inside and baked inside and outside, to return excess dough into production, practically to exclude quantity of flashing due to exact dough dosage.
