FIELD: food industry.
SUBSTANCE: invention relates to food industry. Proposed is a method of pouring the caramel mass of a container on a stick with a surprise in the forms, including the preparation of molasses, caramel syrup, boiling of the caramel syrup to the caramel mass and bottling with a container installed in them. Caramel mass is poured into the gap between the upper part of the container and the surface of the form h1, which, being reduced downwards, exceeds the gap between the lower part of the container and the surface of the form h2. h2 value ranges from 20 % to 40 % of h1 value. In this case, the caramel mass is poured into molds at a temperature of 140 °C under pressure on the oval protrusion of the container, located in the center of the upper part of the container. Also, a device for implementing the given method is proposed.
EFFECT: group of inventions provides improved spreadability over the surface of the container with a lollipop mass in the manufacture of candy with a surprise.
