FIELD: instrument engineering.
SUBSTANCE: invention relates to the manufacture of a composite impact-cutting tool comprising plane-parallel cutting elements and used to prepare a meat or fish product in a home or food industry. Device consists of a handle with U-shaped plates in which, with the help of two threaded studs and nuts, at least a pair of rows of holding plates with fixed cutting-edge blades fixed in them, which are set in the static dependence of a certain pitch (t) of the first row of vertices of the cutting blades and are successively displaced by half of the pitch (0.5t) of the vertices of the cutting blades of the second row of cutting comb plates defined for each subsequent pair of rows of set positions of the cutting blades, which is achieved by alternating cutting blades with an even and an odd number of vertices, but with the remaining unchanged axes of the two holes in the holders, through which there are two threaded studs that hold the entire assembly structure with nuts in two plates, which are a continuation of the handle. Handle allows to hold the entire assembly structure in the hand for positioning the cutting elements along the normal to the surface of the meat or fish product during movements of the infeed and retraction feeds relative to the contact area of the product, and in order to avoid slippage, rubbering or other non-slip coatings of the handle can be made at the place where it is held by hand. If it is possible to use colored plastic for the manufacture of holders, it can be used for additional visual orientation of the position of the two-row alternate placement of the cutting inserts, taking into account the stepwise orientation of the position, for example, blue – even and red – an odd number of vertices of cutting blades, to avoid violations of the order of assembly of the instrument as a whole. Possibility of quick disassembly of each individual blade connection to facilitate complete sanitization of the device as a whole is achieved through the use of threaded studs and nuts.
EFFECT: multiple cutting of veins and fibers of meat or fish product, giving them rigidity, accelerating the cooking time, which allows to improve the taste perception of meat or fish after cooking, is provided.
