FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular to confectionary industry, and may be used for preparation of sugar confectionary products. Disclosed is a composition for production of praline sweets, which includes sugar powder, confectionary fat, dry milk whey, dry milk, lingonberry dry berries, milled chia seeds, halva from sesame seeds, lecithin and vanillin powder, dry milk and dry milk whey in ratio of 1:1 is poured into a melange and thoroughly mixed, added with sugar powder, lecithin, vanillin powder and stirred for 5–7 minutes, then added milled dry lingonberry, ground chia seeds and mixed again for 7–10 minutes, followed by adding confectionary fat preliminarily heated to melting point of 40–45 °C, stirring until homogeneous consistence during 20–30 minutes, packed and delivered for storage at temperature of 4±2 °C.
EFFECT: invention widens range of confectionary products for production of praline sweets with a new original taste, improved organoleptic properties, increased food and biological value.
