SUBSTANCE: proposed wafer candy is a body made of a wafer shell , covered on the outside with chocolate milk icing with a sprinkling of a mixture of peanuts and wafer crumbs, in the form of a hollow three-dimensional geometric figure, consisting of two pieces connected to each other, with a flat base, and placed inside the body of a cream filling. At the same time, the prescription composition of the wafer shell contains wheat flour, corn starch, lecithin, coconut oil, baking soda, salt, egg powder, Alfamalt LQ 4020 enzyme and water. The filling is prepared from a semi-finished product of praline mass, confectionary fat Econat 2004, lecithin, antioxidant Nova Sol Sof. A semi-finished product of praline mass is prepared from roasted peanut kernels, grated to a pasty state, confectionery fat Econat 3004-32, wafer sheets, whey powder, skimmed milk powder, lactose, cocoa powder, confectionary fat Econat 3004, vanillin and white sugar.
EFFECT: expanding the range and improving the organoleptic properties in terms of taste, increasing the shelf life up to 12 months while maintaining the crispy properties of the wafer shell, melting delicate texture of the filling, without traces of delamination of wafer sheets and filling.
