Proposed product includes fresh apples (fruits), sugar, currant confit, albumin, fish gelatine, agar and water at the following ratio of initial components, wt. %: fresh apples (fruits) - 69.5–70.5; sugar - 10.0–10.5; currant confit - 10.0–10.5; albumin - 1.0–1.1; fish gelatine - 0.9–1.0; agar - 0.5–0.6; water - balance up to 100 %.
EFFECT: invention is aimed at improvement of organoleptic and rheological properties of a food product.
