FIELD: food industry.
SUBSTANCE: invention relates to food industry and may be used for production of carrot chips. Method for production of chips from carrots includes inspection of material, sorting, washing, cutting into slices with thickness of 2.5 to 3 mm, enrichment with salt and subsequent drying till preset moisture content. Drying is carried out with IR-rays with wave length in range from 1.2 to 5.0 mcm and density of heat flow from 4 to 6 kW/m2 in oscillating "heating-cooling" mode. Material is heated by infrared rays to maximum allowable temperature on the surface of material from 57 °C to 60 °C, and cooling is implemented without infrared energy supply with application of forced ventilation to temperature on surface of material from 42 °C to 45 °C.
EFFECT: proposed method for production of chips from carrots ensures improvement of quality of finished products due to application of sparing drying mode and reduction of power inputs.
