FIELD: food industry.
SUBSTANCE: invention relates to food industry and may be used as preventive food product for children starting from pre-preschool age. Method for production of meat souffle for baby food includes preparation of mince of rabbit meat with addition of parsley leaves, quail eggs, salt, broth produced after boiling rabbit, vegetable component and sauce. Sauce is prepared of cream and semolina taken in ratio 1:1. Vegetal component is represented by amaranth seeds which are preliminarily washed, boiled for 30 minutes till viscous consistency is obtained, cooled to room temperature and washed additionally. Components are used in the following ratio, wt%: rabbit meat – 50.0–53.0, quail egg – 13.0–14.0, sauce – 21.0–22.0, amaranth seeds – 4.5–5.0, parsley greens – 1.8–2.0, salt – 1.8–2.0, broth – balance.
EFFECT: invention allows to produce a new functional product for baby food.
