FIELD: food industry.
SUBSTANCE: invention relates to a substitute for edible salt for use in food products made of glasswort plant (Salicornia). Disclosed is a method for producing vegetable substitute of edible salt from glasswort, which includes flushing of the aerial part and roots of the plant salters for purification from possible natural contaminants, fermentation of washed out glasswort in a ventilated room for 12–24 hours, drying washed and fermented glasswort in an oven at temperature of 30–65 °C for 24–72 hours or in natural conditions at an air temperature of 20 to 45 °C, relative humidity of 60–75 % from 2 to 14 days and milling of dried glasswort to particle size of 400–800 micron to produce green powder. Also disclosed is a vegetable substitute of edible salt from glasswort, which is obtained using said method and comprises an aerial part and roots of plant salters in form of green powder with particle size of 400–800 microns, ready for consumption and for addition into food product.
EFFECT: invention is aimed at production of a completely natural substitute of edible salt made from a plant convenient for storage and use, nontoxic and containing substances useful to the human body, including a complex of K, Na, Mg salts, having a neutral salty taste and allowing to reduce consumption of edible salt more than twice.
