SUBSTANCE: invention relates to systems for drying and obtaining water extracted during drying from crops, for example, vegetables, fruits, herbs, etc. System for drying vegetables and fruits, characterized by the fact that it comprises a cylindrical housing and a spiral conveyor with its coils passing along the height of the housing, wherein housing is divided into horizontal chambers, through which conveyor passes, to at least two of which connected fan and heater, located in opposite sides of conveyor, wherein the system comprises one or more successively arranged plate evaporators, the housing is connected through the cooling recuperator to the inlet of the plate evaporator, and the outlet of the plate evaporator is connected to the inlet hole located in the upper part of the housing through the heat recuperator, wherein the plate evaporator contains an outlet hole for condensate drainage.
EFFECT: design of a system which enables to perform a process of drying and collecting moisture formed during this process with high efficiency.
