FIELD: food industry.

SUBSTANCE: invention relates to dairy industry. Composition for production of a beverage based on milk whey contains curd whey, cranberry concentrated juice and sugar sand. Curd whey is used clarified using pectin-containing raw material, for which in curd whey with temperature of 20–25 °C, peels of sweet varieties of orange in amount of 0.5–2.5 % by weight of whey, milled to size of 2–3 mm is added, obtained mixture is thoroughly mixed and held for 30 minutes at pH 4.0–4.5, followed by separation of clarified whey. Ingredients are used in the following ratio: curd whey, clarified with sweet orange peel ground to fineness of 2–3 mm: cranberry concentrated juice: sugar sand as 4.333:1.34:1-1.1 respectively.

EFFECT: invention allows to expand the range of beverages with milk whey, as well as produce a beverage with low calorie content, but high biological value, with high consumer properties.
