FIELD: food industry.
SUBSTANCE: vegetable health-effective beverage based on oats contains or mainly consists of carbohydrate with high glycemic index (GI) from oat, characteristic of oat protein, β-glucan, potato protein or potato protein, glycosylated with reducing mono- or disaccharide, or dextran, or combinations thereof and water. Carbohydrate with high glycemic GI is a mixture of disaccharides, in particular maltose and low molecular weight oligosaccharides, obtained or obtained by enzymatic splitting of oat source. Vegetable-based beverage based on oats may contain, in wt %: 2–5 potato protein, 0.1–0.4 beta glucan, 0.5–6 vegetable oil, 4–12 maltose and polysaccharide with low molecular weight and water up to 100. Also disclosed is a method of stimulating recovery of muscle glycogen after exercise by taking a healthful beverage in an amount effective for glycogen reduction, in immediate time proximity to load.
EFFECT: invention allows to produce an oat-based beverage useful for health, which enables to quickly restore glycogen in muscles and delay fatigue after physical activity.
