FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to confectionary and preserves industry, and may be used for production of vegetable jam. One proposes jam from turnip with walnut, including vegetal raw materials, at that, vegetal raw materials are represented by turnip roots and walnut kernel, milled to 0.1–0.2 mm, and sugar sand at following ratio of initial components, wt%: turnip roots 50; granulated sugar 35; walnut kernel 15.
EFFECT: invention ensures expansion of the range, enhancement of nutritional value and balanced specific composition of the target product with respect to biologically active substances.
