FIELD: dairy industry.
SUBSTANCE: method for modifying the composition of dry substances and/or content of dry substances in milk involves the steps of: providing raw milk with a certain fat content, microfiltration exposure thereof, combined with diafiltration using an aqueous solution substantially free of protein, as diafiltration water, to produce modified raw milk, having fat content in range of 35–60 % wt/wt, protein not more than 3 wt/wt and/or carbohydrates not more than 4 % wt/wt. Also described is a method of producing butter from such milk with a modified composition and butter, having protein content in defatted part of butter of not more than about 2.3 % wt/wt and content of mineral substances of not more than 0.8 % wt/wt.
EFFECT: invention allows to reduce content of protein, lactose and mineral substances of milk, without affecting quality of butter.
