FIELD: dairy industry.
SUBSTANCE: buttermilk production method envisages raw cream provision with fat content in the range from approximately 35 wt/wt up to about 60 wt/wt, washing raw cream with washing liquid to form a solution of raw cream and washing liquid, and separation of washing liquid from solution to form washed cream with low content of defatted substance. Whipping of washed cream with formation of buttermilk, having phospholipids content of at least 3 % relative to dry substance content, in particular, at least 3.8 %, more precisely, at least 5.0 %. Buttermilk with the specified content of phospholipids relative to a dry substance, use of buttermilk in infant formula and an infant formula are also declared.
EFFECT: inventions provide higher ratio of phospholipids to content of buttermilk substance.
