FIELD: food industry.
SUBSTANCE: inventions relate to the food industry, in particular to the dairy industry. Method for acidified milk product production includes provision of milk raw material, concentration of milk raw material by membrane filtration with reception of filtration retentate, acidification of the filtration retentate with an acidic aqueous solution to obtain an acidified filtration retentate having a pH in the range of about 5.2 to about 6.5, a calcium/protein ratio of not more than about 0.03, a phosphorus/protein ratio of not more than about 0.025 and processing the acidified filtration retentate into an acidified milk product having a moisture mass fraction of at least 70 % in the defatted substance. Acidification of the filtration retentate is carried out before or during diafiltration to obtain an acidified diafiltration retentate. Invention also relates to acidified dairy product (embodiments).
EFFECT: inventions enable to produce acidified milk products with high protein content, which do not have an unpleasant strongly pronounced acidic and/or bitter taste.
