SUBSTANCE: disclosed is a method of protecting water-soluble vitamins contained in a composition during thermal treatment of said composition at temperature greater than or equal to 90 °C. Composition contains at least 0.8 wt % chitin and at least 0.005 wt % water-soluble vitamins and/or derivatives thereof, based on the total weight of the composition.
EFFECT: invention provides high protection efficiency of water-soluble vitamins.
