FIELD: measurement.

SUBSTANCE: invention relates to determination of consumer characteristics of food products and a method for determining time of maturation of at least one fruit. Method involves measuring the optical spectrum of a white light emitted by a fruit in range of 440 to 1,000 nm and processing the array of measured spectral data. Data processing includes smoothening of measured spectral dependencies by exponential moving average method, spectra normalization to maximum value, as well as reduced dimension of each element of the initial array of spectral data. Fruit maturation time is determined from a pre-formed calibration matrix based on multiple measurements of the fruit spectral data and obtained by using the gradient boosting algorithm.

EFFECT: technical result consists in improvement of accuracy and reduction of measurement time.
