SUBSTANCE: method of assessment of the degree of ripeness of fruits of tomato consists in measuring the maximum of the slow induction of chlorophyll fluorescence and its variability, at that the stage of crude fruits is characterised by the high values of the maximum of the slow induction of chlorophyll fluorescence at its low variability; the stage preceding the ripening is characterised by the average values of the maximum of the slow induction of chlorophyll fluorescence at its high variability; and the stage of complete ripeness - low values of the maximum of the slow induction of chlorophyll fluorescence at its low variability. Separation of fruits to the groups of ripeness within each stage is carried out in accordance with the following criteria: for the first two stages of ripening - the lower the maximum of the slow induction of chlorophyll fluorescence but the higher its variability is, the riper the fruit is; for the stages of complete ripeness - the less the maximum of the slow induction of chlorophyll fluorescence, but lower its variability is, the riper the fruit is.

EFFECT: invention enables to improve the accuracy and efficiency of the analysis of the degree of ripeness of tomatoes by the quantitative assessment of the functional state of fruits on optical characteristics.
