SUBSTANCE: disclosed are a composition of a protective agent for living bacteria, an agent for protecting live bacteria during the drying process, a method for producing a culture powder, a probiotic bacteria culture powder and a product, containing said powder. Composition contains a carrier material, wherein the carrier material contains a polysaccharide, an antioxidant and a combination of amino acids. Living bacteria protection agent is the above composition. Method of producing a culture powder involves obtaining biomass, concentration of biomass, conditioning biomass with an aqueous solution of the above composition and drying. Probiotic bacteria culture powder contains live bacteria and a matrix, wherein the matrix contains said composition.
EFFECT: inventions provide protection of bacteria during spray drying, during subsequent storage and during dilution.
