FIELD: food industry.
SUBSTANCE: invention relates to the food industry. Method of determining the shelf life of food products includes extracting fat from the product, measuring its induction time, determination by reference curve by interpolation method corresponding to induction time value, expired storage life and calculation of storage life resource as difference between established storage life and expired storage life.
EFFECT: invention allows to reduce time and increase accuracy of researches at establishment of service life of product containing fat component, as well as expand the range of use of the method by determining the time interval remaining before the expiry date of the food product under unknown initial storage conditions, at any moment from the date of manufacture to the expiry of the calculated prescribed shelf life.
