FIELD: canning industry.
SUBSTANCE: invention relates to the canning industry. A method for the production of a paste from broccoli, sweet peppers and common hop powder involves washing, cleaning, inspection, cutting and directing broccoli, sweet peppers into a microwave unit for heating under the following technological modes: for sweet peppers: power - 560 W, specific work - 28 W/g⋅min, heating time - 300 s; for broccoli cabbage: power - 560 W, specific work - 21 W/g⋅min, heating time - 230 s. Next, the softened pieces of pepper and cabbage inflorescences are rubbed and the resulting mass is homogenized. Then the resulting puree of two types is mixed, powder from ordinary hops is added. The resulting mass of paste is boiled in a vacuum apparatus, packaged in glass jars by hot filling, corked with prepared lacquered lids and sterilized in an autoclave. At the same time, the ingredients are added in the following ratios, wt.%: sweet pepper puree - 57, broccoli cabbage puree - 38, common hop powder - 5.
EFFECT: invention reduces the duration of heat treatment by 2.0-2.7 times while increasing the microbiological stability of the paste and ensures the preservation of the total content of antioxidants by 39-50%.
