FIELD: canning industry.
SUBSTANCE: method for production of apple compote is characterized by the fact that fruits laid in jar are heated by cyclic injection of saturated water vapor with increase from cycle to cycle by 10 °C temperature for 96 s. Then syrup is poured, sealed and sterilized in autoclave according to certain mode.
EFFECT: invention allows to reduce sterilization duration, reduce non-uniformity of heat treatment as well as enhance the ready products quality.
