FIELD: canning industry.
SUBSTANCE: quince fruits are packaged into jars and heated during 72 s by means of cyclic supply of saturated steam with increasing temperature into jars. Duration of cycles of steam supply and maintenance is 6 s and 6 s respectively. Steam temperature from 100 °C with each cycle increases by 10 °C. In each steam supply cycle, the outer surface of the jars is blown by air heated to temperature of 120–130 °C. Filling with 97–98 °C temperature syrup, sealed and sterilized in autoclave according to mode: (8−15−12)/(90−100−55)·88 kPa. One performs cooling in another autoclave or reservoir according to 5/35 mode.
EFFECT: invention allows reducing the process duration and enhancing the end-product quality.
