FIELD: food industry.
SUBSTANCE: proposed honey beverage contains an aqueous solution of floral honey and contains in a dissolved state a complex of biologically active substances of bee cerago, bee propolis and flower bee pollen (pollen load). Flower bee pollen triggers the fermentation process by placing the obtained beverage in a dark room at temperature of 20–30 °C. At temperature of 20 °C drink will be ready in 10 days, at temperature 30 °C—7 days later. Aqueous solution of flower honey is prepared at rate of 209.9 kg of honey per 1000 l of the solution. Components of the beverage are taken in the following ratio of components in wt %: aqueous solution of flower honey 94.0–94.5, bee cerago 4.51–4.91, bee propolis 0.53–0.61, flower bee pollen 0.43–0.51.
EFFECT: invention is aimed at expansion of the range of honey beverages and production of a functional-purpose beverage with high organoleptic characteristics.
