FIELD: food industry; confectionary industry.
SUBSTANCE: invention can be used in production of confectionary products. Disclosed is a confectionary product in the form of a bar with a coating and a filling, which includes a chocolate mass and peeled whole dried banana fruits, wherein initial content of chocolate mass is from 10 to 20 wt %, bananas from 80 to 90 wt %, wherein drying of banana fruits is carried out by drying whole peeled banana fruits in convection ovens at temperature of 46–80 °C for up to 72 hours with subsequent cooling to room temperature in a dry ventilated room for at least 24 hours, after which the chocolate mass is heated to complete melting at temperature of 42–45 °C, a coating is applied on prepared dried banana fruits, the obtained product is cooled down to room temperature. Also disclosed is a confectionary product in the form of a bar with a coating and a filling, which includes chocolate, confectionary or sugar glaze and peeled whole dried banana fruits, wherein initial content of glaze is from 10 to 20 wt %, bananas from 80 to 90 wt %, wherein drying of banana fruits is carried out by drying whole peeled banana fruits in convection ovens at temperature of 46–80 °C for up to 72 hours with subsequent cooling to room temperature in a dry ventilated room for at least 24 hours, after which the glaze is heated until complete melting at temperature of 42–45 °C, a coating is applied on prepared dried banana fruits, the obtained item is cooled down to room temperature.
EFFECT: invention is aimed at production of confectionary product enriched with macro- and microelements, protein, with original taste, aroma and better digestibility.
