FIELD: dairy industry.
SUBSTANCE: invention relates to the dairy industry. The skim milk is heated to 45°C and separated to obtain skim milk with the amount of milk fat in the range of 0.05%. After the separator, the milk in the flow is cooled to 10°C and sent to the first microfiltration unit MF1.4, which operates, like all the others, for 18 hours. Washing is carried out for 6 hours. Skim milk in the form of permeate is sent to the second microfiltration unit MF0.2, where distilled water is added in the stream. As the permeate, "poor" skim milk is obtained, and as the retentate, a colloidal solution of micellar casein with a solids content of 17.5% is obtained. The permeate is sent to the UF10 ultrafiltration unit, where distilled water is added in the stream. As a permeate, a "dirty" lactose syrup is obtained, containing amino acids, salts and other sugars; as a retentate, a colloidal solution of whey protein isolate with a solids content of 23% is obtained. The isolate is sent to a vacuum evaporator, where it is concentrated under a deep vacuum at 40-45°C to a dry matter fraction of no more than 40%. It is directed to the dosing device, where the isolate is fed in the form of drops onto the belt of the quick-freezing tunnel. In the tunnel itself, in addition to the standard set, acoustic emitters with a power of 1 to 500 W/m³ are installed, which create acoustic waves with a range of 10 to 5000 kHz. The balls, frozen to -24°C, are sent to vacuum belt freeze drying and dried in a stream at a vacuum depth of no more than 1 mbar at the temperature of the heating elements in the chamber so that the temperature of the product during movement does not exceed 40°С.
EFFECT: invention ensures the manufacture of a product in its native form in a dry state.
