FIELD: food industry.
SUBSTANCE: invention relates to the food industry. Cake production method involves kneading dough of margarine, white sugar, chicken eggs, food culinary salt and prime grade wheat flour, dough pieces molding and baking. In the dough one introduces a mixture of prime grade bakery flour, “Polet” grade amaranth grain flour in quantitative ratio of 5–10 % of the total weight of flour and flour from grain of foxtail millet (Setaria italica subsp. italica) of “Yantarnaya” grade in quantitative ratio of 15–20 % of the total weight of flour. Wherein, grinding of grain of “Yantarnaya” grade foxtail millet and “Polet” grade amaranth is produced at mill Quadrumat® Junior (Germany), and the control sieving of flour obtained – through a sieve No. 27.
EFFECT: invention allows to increase biological value of products, enhance taste qualities and nutritional value of cakes.
