FIELD: food industry.
SUBSTANCE: invention relates to food industry. Cookie production method envisages emulsion preparation by way of white, margarine, melange whipping, flour introduction into it, stirring and addition of carbon-ammonium salt, aerating agent, vanilla sugar. Flour used is prime grade bakery flour with addition of Amber breed Siberian millet grains flour in amount of 15–20 % of the total flour weight. Amber breed Siberian millet grains are ground at Quadrumat® Junior mill (Germany), and control sieving of produced flour is performed through sieve 27.
EFFECT: invention allows to enhance biological value, enhance taste qualities and nutritive value of the ready product.
