FIELD: food industry.
SUBSTANCE: invention relates to food industry and catering, namely to production of minced meat semi-finished products. Proposed is a chopped semi-finished product containing rabbit and turkey meat, shiitake mushrooms as the main and auxiliary raw materials, carrots, onions, culinary food salt, a mixture of spices: dried ground dill, cilantro, parsley, basil, tomato, bell pepper, caraway, almonds and black pepper, nitrite salt, and water at ratio of initial components, wt.%: rabbit meat 21.8-50.9; turkey meat 21.8-50.9; shiitake mushrooms 6.5; carrots 5.8; bulb onions 5.8;edible salt 0.7; spice mixture 1.1; water – balance.
EFFECT: invention ensures enhancement of the chopped meat semi-finished product nutritive value, improvement of the product quality characteristics, including organoleptic properties, as well as expansion of the range.
