SUBSTANCE: invention relates to a casting mixture for producing gelatine products. Disclosed is a mixture for casting chewing gelatine products by pouring into solid hollow forms, which is a homogeneous aqueous solution, containing the following components: 4 to 16 wt % gelatine, having average molecular weight determined by gel chromatography of not less than 130 kDa, preferably, not less than 145 kDa, in which gelatine content, having average molecular weight of more than 130 kDa, is not less than 35 wt %, preferably not less than 45 wt %; from 6 to 76 wt % of one or more hydroxy sugars; from 0 to 50 wt % glucose syrup having viscosity less than 800 mPa·s, preferably less than 700 mPa·s, measured at dry substance content equal to 80 wt %, and at temperature equal to 50 °C; and from 0 to 50 wt % of sucrose, in which if glucose syrup is present, glucose syrup and hydroxy sugar(s) together form 25 to 76 wt % of an aqueous solution, and in which the aqueous solution has a dry substance content of not less than 78 wt % and/or water activity (value of aw) of less than 0.75. Disclosed is a method of producing chewing gelatine products, which includes the following steps: obtaining said solution for casting; pouring solution for casting at temperature equal to 80 °C or higher, into solid hollow forms; cooling solution for casting in hollow forms to obtain products of gelatine; and extracting products from gelatin from hollow forms. Invention also discloses chewing gelatine products obtained using said method.
EFFECT: invention provides a mixture for casting to obtain products of gelatin, which is applicable for casting into solid hollow shapes, where end product has typical texture of products of gelatin, expected by consumer.
