FIELD: food industry.
SUBSTANCE: invention is related to dairy industry. The method for production of a milk phospholipids concentrate of cow milk serving as a phosphatidylserine source envisages centrifugation of cream obtained in the course of milk fat production to produce cream where fat content is approximately 80 %. Then the produced emulsion is disintegrated using high shear forces. Then one proceeds with buttermilk, separation of fat from buttermilk, skimmed buttermilk processing by way of ultrafiltration and the produced concentrate spray drying. The produced concentrate is used in varied nutriceutical compositions.
EFFECT: invention enables production of a phospholipids source noted for good dispersion ability, organoleptic properties and physical stability.
