FIELD: food industry.

SUBSTANCE: invention relates to the food industry. Method for production of pretzel with cinnamon includes mixing of butter with sweetening substance, aerating agent, eggs and molasses, adding flour, stirring, dough kneading, rolling into bundles, moulding, baking and sprinkling with a mixture of cinnamon and functional components. Sweetening substance used is fructose in amount of 110–120 g per 1 kg of the product, and as a baking powder a mixture of ammonium carbonate and sodium hydrogencarbonate is added in equal amounts. Maltose molasses is used as molasses. Baking is performed at temperature of 180–200 °C. After baking goods are sprinkled with mixture of cinnamon, girasol powder and bilberry powder in amount of 1.4–1.6 g per 1 product.

EFFECT: invention allows to manufacture products with reduced sugar capacity and high consumer properties, including organoleptic indices, physiological value and higher nutritive value of the product, as well as facilitate the production process and reduce economic costs due to the technology change.
