FIELD: confectionery industry.
SUBSTANCE: invention relates to the confectionery industry, namely to the production of cookies. The method for cookie production involves mixing mashed margarine and eggs, adding a sweetener and baking soda, adding a flavoring component, maltose molasses, sifting and adding flour, kneading dough, rolling into layers, slicing in the form of sticks, baking, applying syrup to products and sprinkling with a functional component. For the manufacture of cookies, a sweetening agent is used, stevia leaf powder in an amount of 0.5-0.7 wt. % of the products. It is added to the dough in a mixture with baking soda in a ratio of 3:1. As a flavoring component, raisins are used at the rate of 5.5-6.5 wt. % of products. Maltose molasses is added in an amount of 2.5-3.5 wt. %. Baking is carried out at a temperature of 180-190°C for 9-11 minutes. Syrup is applied to baked products at the rate of 2.5-3.5 wt. % of the products. The cookies are sprinkled with crushed flax seeds taken in an amount of 4-6% by weight of the products.
EFFECT: invention is aimed at obtaining a new product with reduced sugar content, having high flavor-aromatic properties and enriched with macro- and micronutrients important for metabolism.
