SUBSTANCE: described is a method of producing hydrolyzate. Declared method includes a step of mixing protein or a part thereof with an endoprotease and a proline-tolerant tripeptidyl peptidase having exopeptidase activity, wherein said proline-tolerable tripeptidyl peptidase is capable of cleaving tripeptides from the N-terminus of peptides having a proline to P1' or an amino acid, selected from alanine, arginine, asparagine, aspartic acid, cysteine, glutamine, glutamic acid, glycine, histidine, isoleucine, leucine, lysine, methionine, phenylalanine, serine, threonine, tryptophan, tyrosine, valine or synthetic amino acids in position P1'.
EFFECT: invention extends range of products for producing hydrolyzate.
