FIELD: food industry.
SUBSTANCE: invention relates to the tea industry. French willow is subjected to mild rolling. Then the raw material is laid on the grate and subjected to forced dry-curing to residual moisture content of 52–54 % through raw material bottom upward heating to 32–48 °C by air and automatic rotation of raw material on grid by means of vibration.
EFFECT: invention enables to reduce the time of dry-curing of French willow water from 12–36 hours to 2–4 hours depending on initial raw material moisture and selected temperature and air injection parameters, substantially increases raw material procurement for production of tea from French willow and provides for the possibility of organizing year-round production.
