FIELD: food industry.
SUBSTANCE: invention relates to tea industry. Upper part of French willow is made sour, making 25-30 cm, is brought for processing and milled into particles sized 2–6 mm. It is pressed to extrude excess moisture and raw material is brought to moisture content of not more than 65 %. Said juice is collected, which is moistened with collected juice before 15 % of weight before granulation. Raw materials are placed into sealed containers made of airtight film with capacity of not more than 50–100 kg, sealed and evacuated to 60÷70 kPa and mass density 700÷800 kg/m3. Storage is performed till further processing.
EFFECT: invention ensures storage of raw materials for organization of all-year-round production of granulated tea from French willow, with simultaneous deep fermentation with change of chemical composition, affecting organoleptic properties of tea made from them, reducing astringency and bitterness, improving after-taste and aftertaste, with preservation of maximum quantity of all valuable components required for production of high-quality tea.
