FIELD: food industry.
SUBSTANCE: proposed method for producing a food product containing hydrolyzed starch includes the stages of supplying a source material containing starch and at least one amylolytic enzyme, supplying water, at least one additional amylolytic enzyme containing an amylase wherein said amylase is not endogenous to the supplied source material, and optionally one or more other ingredients. The source material and the additional amylolytic enzyme are then mixed. The mixture is brought to a temperature leading to gelatinization of starch in said mixture and to inactivation of at least one amylolytic enzyme provided by the source material at the stage, and simultaneously high-shear mixing of said mixture is performed using an annular layer mixer. The mixture is further incubated to achieve the required degree of hydrolysis.
EFFECT: invention is aimed at producing a food product containing hydrolyzed starch with reduced maltose content relative to other processing methods and with low viscosity.
