FIELD: food industry.
SUBSTANCE: disclosed is a method of producing a food product containing hydrolysed starch, according to which a starting material containing starch and at least one amylolytic enzyme are mixed with water, wherein optionally at least one additional amylolytic enzyme and optionally one or more other ingredients are used. Obtained mixture is heated and simultaneously high-shear mixing of the mixture is carried out using an annular layer mixer. Then the mixture is incubated. Food product containing hydrolysed starch is obtained, wherein the food product has a reduced content of maltose, which is 6 wt./wt.% or less.
EFFECT: invention enables to obtain a product with low sugar content.
