FIELD: food industry.
SUBSTANCE: invention relates to the food industry, in particular to compositions that improve the taste of the product. The new sweetener composition contains a non-caloric sweetener, trans-4-methyl-5-butyl dihydro-2(3H)-furanone, and one or more compounds selected from a group consisting of furfural, 4-hexene-1-ol, trans-2,4-hexadienal, 2,4-hexadien-1-ol, 5-methylfurfural, delta-tetradecalactone, cis-4-methyl-5-butyl dihydro-2(3H)-furanone, butyl acetate, 3-methylbutanol, 2-methylbutanol, ethyloctanoate, ethyldecanoate, ethylhexadecanoate and combinations thereof. The sweetener composition is used in beverages, beverage concentrates, and food products.
EFFECT: proposed sweetener composition has improved organoleptic characteristics in comparison with similar non-caloric sweeteners, in particular, it has a reduced bitterness and/or astringency and a higher sweetness.
