FIELD: food industry.
SUBSTANCE: invention relates to brewing industry. Installation for continuous extraction of beer mash comprises a shell-and-tube extractor with a cylindrical element located inside the housing parallel to its axis, on the surface of which two convectionally permeable partitions are fixed, and inside the element there are two corresponding channels partition walls, parallel to the axis of the element, each of which has one or more connections to the surface of the element under the corresponding partition. Plant is also equipped with pumps of volume type supply of beer mash into housing, removal of mash from housing and counter-current supply of extractant into channels of element, process pipelines, pulsation system including cross-open and closed controlled valves on extractant supply and discharge branch pipes.
EFFECT: invention makes it possible to achieve the required parameters of the extraction process when obtaining beer wort.
