FIELD: refined oil production.
SUBSTANCE: refined oil includes at least 35% polyunsaturated fatty acid (PUFA), where PUFA is arachidonic acid (ARA), eicosapentaenoic acid (EPA), docosahexaenoic acid (DHA), and combinations thereof, and where the oil contains a fatty acid ester of monochloropropanediol, epoxypropanol, and mixtures thereof in an amount of 10 ppm or less. The food product includes the above oil. The method for producing the above refined oil includes: (a) treating the oil with a combination of silicon dioxide and activated carbon, and, if necessary, bleaching clay; and (b) deodorization of the oil, where the oil is exposed to steam when heated; while the fatty acid ester is the fatty acid ester of monochloropropanediol, epoxypropanol, and their mixtures. Refined oil (variant) obtained by the above method. The resulting variants of the refined oil can be added to cosmetic compositions, pharmaceutical compositions, feed compositions, veterinary compositions and food products.
EFFECT: invention makes it possible to reduce and/or prevent formation of fatty acid esters, which are responsible for oxidation of oils.
