SUBSTANCE: invention relates to the food industry. The method of obtaining food concentrate of grape polyphenols containing stilbenes involves mixing grape raw materials, which is used as a crushed grape vine from spring pruning of vineyards, with ethyl alcohol, infusion of the extraction mixture under hermetic conditions, separation of the extract from the solid phase and its concentration by distillation of alcohol under vacuum , the introduction of glucose-fructose inverted sugar syrup into the concentrate, while the concentrate, after adding the sugar syrup, is re-blended with rectified ethyl alcohol at a ratio of 1: 1 by weight, the resulting blend is re-concentrated by removing the alcohol under vacuum.
EFFECT: method helps to obtain a concentrate with biological activity with increased content of stilbene polyphenols.
