SUBSTANCE: invention relates to the food, cosmetic and pharmaceutical industries, and can be used to produce a water-based propolis extract. Propolis is cleaned from mechanical impurities in an air flow, frozen at a temperature of 20°С below zero and crushed. A water solution of propolis is prepared by mixing crushed propolis with drinking tap water pre-purified from heavy metal salts and ionised with silver ions by passing through a filter and an electrolyser. The propolis solution is treated with ultrasound for 20 to 30 minutes, the homogenised propolis solution is packed in a thermoplastic film packaging with reversible deformation. The tightly packaged propolis solution is placed in a high-pressure chamber filled with distilled water, tightly sealed and treated with a pressure of 600 to 1000 MPa for 5 to 6 minutes. The propolis solution is placed in a water bath at a temperature of 80 to 85°C and the extraction process is executed for 3 to 4 hours. The propolis extract is cooled to a temperature of 15 to 17°C, filtration is executed through fabrics intended for filtration and by centrifugation.

EFFECT: invention allows intensifying the technological process, improving quality of the resulting water-based propolis extract, reducing time and temperature of extraction, increasing biological value of the obtained extract; increasing the content of flavonoids, rutin, quercetin, narenginin and polyphenolic compounds, reducing the content of raffinate, reducing microbiological contamination of the water extract of propolis.
