FIELD: food industry.
SUBSTANCE: extrusion head (2) suitable for extruding a food product having a moisture level of 2.5 to 6.5% of the extruded food product is made with the possibility of connecting to the end part of extruder (1), wherein the specified extrusion head has in cross section: round central open part (28) and peripheral open part (29) with recesses containing recesses (30), in which recesses communicate with the round central part, thereby forming longitudinal grooves on the surface of the extruded product, in which the ratio of the surfaces of round central part (28) and peripheral part (29) with recesses is in the range from 1:15 to 1:45. A device for making a food product containing an extrusion head additionally contains extruder (1), to the end of which extrusion head (2) is attached for making a food product flow, and separation device (5, 6) for forming a plurality of individual food products from the food product flow. A method for making an extruded food product includes the following stages: extrusion of the food product using extruder (1), wherein the food product is passed through extrusion head (2) connected to the end part of the extruder, while the specified food product is in the form of flow of an extruded food product when exiting the extrusion head and has a moisture level from 2.5 to 6.5% of the extruded food product; and the separation of flow of the extruded food product into many separate food products (6, 6’). Extruded separate food product (6, 6’) obtained by the above-mentioned method contains longitudinal grooves and recesses on its outer surface, wherein the specified recesses have a size reaching up to 15 mm in length and are oriented perpendicular to the longitudinal grooves. Co-extruded separate food product (6, 6’) obtained by the above-mentioned method contains longitudinal grooves and recesses on its outer surface, wherein the specified recesses have a size reaching up to 15 mm in length and are oriented perpendicular to the longitudinal grooves.
EFFECT: invention makes it possible to obtain a new type of extruded or co-extruded piece of a food product that provides attractive and natural appearance of pieces with very pleasant texture for the consumer, with aerated and crispy texture along with natural appearance.
