FIELD: food industry.
SUBSTANCE: the present innovation deals with manufacturing extruded products being acceptable to be eaten as an independent dish, in particular, as a dry breakfast, and, also, as garnish for meat, fish dishes, broth, as snack to beer, etc. At realization of the method one should prepare the mixture based upon pea meal or grains supplemented with wheat flour, and, also, corn and/or rice flour or cereals. The mixture should be moisturized with water introduced at the quantity of 15-20% against the total weight of the mixture to be extruded at obtaining braids about 8-10 mm thickness. Braids should be cut into portions to be dried at 100-200° C for 1-1.5 min at obtaining articles at 3-5% moisture. Then articles should be kept in a tank for 15-18 h for gradual decrease of moisture to apply flavourings onto their surface. To prepare the mixture one should take the components at the following ratio, weight portions: pea flour or cereals about 70-75, corn and/or rice flour or cereals 18-20, wheat flour about 5-12. Thus, one should obtain extruded food product being independent object of the innovation that enables to obtain new product at stable structural-mechanical properties during storage period terms.
