FIELD: food industry.
SUBSTANCE: invention relates to the food industry and can be used for mass steam cleaning of vegetable raw materials from the peel. The installation includes a tank divided into two compartments, which has openings with lids for loading and unloading vegetable raw materials, a loading compartment with a retaining mesh, a cylinder with heaters, a heat accumulator and a liquid ring vacuum pump. In the upper part of the tank, the loading compartment with a retaining net forms an internal retaining dome for plant materials. The heaters installed in the cylinder are made of a conductive polymer with self-regulation of temperature and a dielectric outer sheath. The liquid ring vacuum pump is connected to a branch pipe located in the side of the tank. The installation has auxiliary peripheral tanks with heaters, located symmetrically relative to the cylinder with heaters.
EFFECT: use of the invention will improve the quality of cleaning plant materials.
