SUBSTANCE: invention relates to biotechnology and the food industry. The method for producing rebaudioside D4 is implemented as follows. Rebaudioside E, a recombinant polypeptide constituting UDP–glycosyl transferase (UGT) selected from Clm2 containing an amino acid sequence characterised by at least a 80% identity with SEQ ID NO: 7, and Clm3 containing an amino acid sequence characterised by at least a 80% identity with SEQ ID NO: 9, and a substrate selected from the group consisting of sucrose, uridine diphosphate (UDP), and uridine diphosphate glucose (UDP-glucose), are incubated in a reaction mixture. Thus, rebaudioside E is transformed into rebaudioside D4.
EFFECT: invention provides a productive method for synthesis for improving the taste qualities of stevia extracts and increasing the yield of the rebaudioside compounds generally having more desirable taste characteristics, the purity of rebaudioside D4 is greater than 70%.
